just finished up 3 plants chopped them, and pulled some of the leaves off that were covering the buds that way there wouldn't be any mold when drying. I left the majority of the leafs on and untrimmed, that way they got a nice even slow dry. My tent is hovering around 48 to 50% humidity with them hanging in there and my fan exhausting on the lowest setting. The temperature stays between 68 and 73 typically as well with no lights.

Do I need to do anything else? With these stats how long roughly will it take before they are ready to be jarred? They look and smell amazing and I really dont want to ruin them.

Not 100% but didnt look ready for the chop I'd drop the humidity down to 40s after a few days

I think the general rule is 1 day per 10% relative humidity in the room plus a day. So you go 5 days and check for the stems to snap, if they don't break off easy go till they do. another day or two.

That being said, I prefer to trim wet, even though it is sticky. I feel like I get a better product with better flavor that way. It's not too bad if you keep alcohol on hand to wash your clippers with, and maybe your hands.

When the stems have a good snap, they will be ready to jar. Somewhere around 7 days in general.
